This allowed for individual attention to each variety regarding fermentation and maceration, thus highlighting their unique aromas and the softness of their tannins. The fermentation temperature never exceeded 25°C, and pumping over was carried out with extreme care. Syrah and Sangiovese underwent cold maceration at 8°C before alcoholic fermentation to gently extract color and aromas.
