This Riesling comes from Ca' Botta, grown on the Tenuta Soprazocco on Lake Garda – a wine that takes its time.
Following the appassimento method, the grapes are picked by hand, left to dry on straw mats until November and only then gently pressed – 1.5 kg of fresh grapes go into every bottle of this 2018.
What follows is patience: ten days of maceration at below 6 °C, twenty days of fermentation at below 12 °C, in stainless steel tanks. The result is not a loud wine, but a precise one.
On the nose, it shows itself ripe and multifaceted – pear, peach, a hint of crisp citrus, a little pineapple. Then, on the palate, that unmistakable minerality of the limestone soils around Lake Garda, carried by apple, warm apple pie and a dash of lime marmalade. Dry, but never austere – a Riesling with texture and backbone, shaped by the climate and soil of northern Italy.
Ideal with mature cheese, white meat or simply for a quiet evening when the wine itself leads the conversation.
