Amontillado is a dry aged sherry, whose color falls between Fino and Oloroso.
Amontillado sherry first matures under a layer of flor yeast and is then exposed to further oxidation
in the air. Roasted almonds and hazelnuts are classic aromas for Amontillado casks.
