- Nose: Like a room with an open fireplace: soot, tar or machine grease and some peat, becoming increasingly fruity later on.
- Palate: Concentrated, with cereal, oak and vegetal notes, reminiscent of heavily fermented soy sauce; tarry, almost sulphurous, plus mushrooms, forest floor, damp cardboard and a little salt.
- Finish: Slightly salty molasses with coppery nuances on the finish.
Distilled in 1999 and bottled at 21 years old, the Trinidad Rum from Fernandes offers the full rum experience and shows that 61.5% can be smooth and velvety.
