The Cuvée "Rare Collection" Blanc de Blancs 2012 from Barons de Rothschild is made from four Grands Crus of Champagne located on the Côte des Blancs (Avize, Cramant, Oger, Le Mesnil-sur-Oger).
A long winter was followed by a cool spring with little sunshine. While very heavy rainfall with hail affected yields until the end of July, the warmer conditions in August saved the vintage. Despite the low yields, the 2012 vintage is of very high quality.
Exclusive use of the cuvée (first pressing). Vinification parcel by parcel in small 20hl stainless steel tanks and a small proportion in barriques. The 9-month aging on fine lees in small tanks, accompanied by regular stirring of the lees, is followed by at least 8 years of aging on lees in the cellar. The dosage of this extra brut cuvée is 4 g/l and the resting period after disgorgement is at least 12 months.
Color: Radiant, pale golden color
Nose: A blend of fresh fruits, rich lemons with toasted notes and apricot-like dried fruits, as well as toasted almonds.
Taste: Delicious notes of citrus fruits and lemon zest. Full-bodied, precise and complex. Intense toasted aromas of mocha and vanilla underscore the finish. A harmony between freshness and character.
Grape Variety: 100% Chardonnay
Serving Suggestion: Perfect with poached turbot fillet, lightly spiced chicken breasts, or even veal medallions with morels. For optimal enjoyment, serve the wine between 8°C and 10°C.
