2015 Ca' Botta 'Il Priore' Rosso Veronese IGT - Italy

Short description: Red wine with a special concept, made from grapes that have been dried for a longer period with fermentation in the patented Fermentino Ca'Botta® tank, for a particularly powerful body. This wine was created as proof that a very strong wine can be well balanced, where alcohol does not distract from the enjoyment of the taste and only warms up in the aftertaste. The IGT of Il Priore Rosso Veronese shows the advantage of Fermentino Ca'Botta®. Characteristics: Intense and strong structure, but at the same time elegantly soft and refined. This wine was created as proof that you can balance a high alcohol wine with a very strong body. The high alcohol content of the wine does not detract from the elegant and full-bodied taste. Its taste is round and intense with a high content of extracts and polyphenols. The color is ruby red with garnet accents. The fragrance is harmoniously structured. Technical details:
Made from a selection of the best grapes, strictly hand-picked and under careful quality control. The harvest lasts from late September to mid-October. The collected grapes are carefully placed in net boxes and dried with fresh air from outside, ventilated with high-altitude air from the mountains. The grapes, with a proportion of 25%, are pressed in February. As a result, each bottle contains 4.3 kg of fresh grapes. Winemaking: Maceration and fermentation take place in the Fermentino Ca'Botta® stainless steel tanks using a patented process. Maceration lasts 10 days at a temperature below 8ºC, fermentation 30 days at a temperature below 20ºC.
