The shallow and meager terroir structure ensures excellent regulation of the water balance and promotes deep rooting of the vines. Furthermore, this very early ripening terroir is characterized by natural soil drainage and exceptional sun exposure. The grapes, especially the Merlots, ripen under optimal conditions year after year.
Taste:
The 2018 La Mondotte has a deep garnet-purple color and wafts expressive scents of plum preserves, blueberry compote, and chocolate-covered cherries, followed by hints of candied violets, licorice, and black truffles. It is medium to full-bodied with impressive tension and wonderfully ripe, velvety tannins supporting the generous layers of black fruits, finishing with amazing length.
Production:
La Mondotte 2018 was produced with the utmost respect for the fruit and the terroir. For winemaking, the grapes are hand-picked and carefully sorted twice. Fermentation takes place over 25-28 days in temperature-controlled wooden vats. The wine undergoes malolactic fermentation in the barrel and ages for 18-20 months in new French oak before bottling.

Ideal with grilled meat, game, lamb, poultry, and spicy cheese.
