The name derives from the Spanish adjective "oloroso" = "fragrant," which already hints at the intense aroma of the sherry. Essentially a Fino sherry that has oxidized more strongly during its maturation, Oloroso boasts an impressive bouquet of aromas: nuts, vanilla, caramel, dark ripe fruits, spices, oak... Casks of this robust, dry sherry variety have been used for decades in the global whisky world for maturing and finishing a wide variety of whisk(e)y. In Chapter 4, the soft, intense sweetness and fruitiness of the maturation in PX casks are now perfectly balanced with the nutty-dry spice of the finish in the Oloroso Quarter Cask – a full aromatic broadside whose subtle nuances and multifaceted depth should not be missed...
