This time, we encounter a special member of the Sherry family in the Amontillado Sherry used for secondary maturation. Complex and smooth at the same time, its uniqueness is based on a multi-stage aging process: similar to Fino & Manzanilla, the wine, made from Palomino grapes, initially matures under a layer of yeast (flor), before being subjected to oxidation in the second step. Depending on the length of both aging phases, Amontillados can vary considerably. But it is only through the special combination of maturation processes that the wine acquires its distinctive character and its gentle, delicate aroma with notes of hazelnut, spicy herbs, and dark tobacco. In Chapter 5, these aromas now combine with the dark sweetness and fruitiness of the pre-aging in the PX Sherry Cask to create an enticing potpourri …
