Winemaking:
The fruit for this blend of various grapes, primarily consisting of Grenache, Cinsault, Shiraz, and Vermentino, is carefully selected from the best parcels in La Motte, Provence. The grapes are destemmed and gently crushed at a low temperature to prevent oxidation. Vinification in stainless steel tanks helps to preserve the wine's fruitiness, while bâtonnage – stirring the lees – gives the wine its character.
