Double Cask Distilled by Master Distiller John Peterson
Nose: Very sweet. Initially heavy on caramel cream, then caramelized fruit sugar, toffee, and fudge, before some apple and peach emerge. Over time, a charred bourbon note with a pleasant dusty dryness.
Palate: Sweet start and quite oily, and although the alcohol causes a slight tingling on the tongue, the result is a good weight in the mid-palate. The dry distillation character is still present, but there is now a depth that counteracts it. Water slightly dissolves the various elements but adds some dried mint.
Finish: Deep and dark.
