Alcohol-free in Germany means: at most 0.5 % vol. Most of our alcohol-free wines are made by vacuum distillation: the alcohol is drawn out of the finished wine at around 30 °C, and fruit and acidity remain. Exactly these two qualities make them the ideal base for drinks. Alcohol as a carrier of flavour is missing, so we bring the depth back with citrus, herbs and carbonation.
Four recipes with bottles from our range. The mixers – tonic water, ginger beer, soda, elderflower syrup – are in every supermarket.
Before you mix: three rules
- Ice cold. Wines and mixers at 6–8 °C, and pre-chill the glass with ice. Warmth pushes the residual sweetness of alcohol-free wines to the front.
- Ratio 2:1. Two parts wine, one part mixer is the starting point. Tonic and ginger beer are sweeter than soda, so top up rather than drown.
- Bubbles last. Wine, syrup and citrus go into the glass first, then the sparkling part, one brief lift – don't stir.
1. Roséli Spritz
The Kaiserstuhl classic as an aperitif: wild strawberry and pink grapefruit from the Briem Roséli Alkoholfrei against the fine bitterness of the tonic.
- 10 cl Briem Roséli Alkoholfrei, well chilled
- 5 cl tonic water
- 1 slice of orange, 1 sprig of rosemary
- Ice
Fill a wine glass with ice, pour in the Roséli, top up with tonic, add the orange and rosemary. For a single glass or on the go: the 0.25 l bottle makes exactly two spritzes.

2. Hugo without

Elderflower, mint, lime – the Hugo works almost better without alcohol, because the mousse of the YBY Sparkling Secco at 0.0 % vol stops the syrup from tasting over-sugared.
- 10 cl YBY Premium Non-Alcoholic Sparkling Secco
- 2 cl elderflower syrup
- 4 cl soda
- 1 wedge of lime, 4–5 mint leaves, ice
Clap the mint briefly in your hand, add it to the glass with the lime and syrup, ice on top, pour in Secco and soda.

3. Chardonnay Ginger Cooler

Pear and apple from the Arthur Metz 0 % Chardonnay meet the heat of ginger beer – a long drink that works with food too.
- 10 cl Arthur Metz 0 % Chardonnay
- 8 cl ginger beer
- 1 cl fresh lime juice
- 3 thin slices of cucumber, ice
Highball glass with ice, lay the cucumber against the side of the glass, add the Chardonnay and lime juice, top up with ginger beer.

4. Rosé sangria for the jug

For the whole table: the Hans Baer Pinot Noir Rosé alkoholfrei brings strawberry and raspberry, the rest comes from the fruit bowl.
- 1 bottle Hans Baer Pinot Noir Rosé alkoholfrei (0.75 l)
- 20 cl orange juice, freshly squeezed
- 1 handful of berries, 1 peach in wedges, 1 orange in slices
- 30 cl tonic water or soda, only just before serving
Let the rosé, juice and fruit steep in the jug in the cold for two hours. Only top up with tonic or soda at the table, so the bubbles stay.

0.0 or 0.5?
By law, alcohol-free may contain up to 0.5 % vol – as much as occurs in some fruit juices or very ripe fruit. Roséli, Chardonnay and the Pinot Noir Rosé are below this limit; the YBY Secco at 0.0 % vol is completely free of alcohol. If you want none at all, mix with the Secco.
