2021 Elite d'Or Cabernet/Marselan – Domaine de la Baume
A cuvée of Cabernet Sauvignon and Marselan – the cross of Cabernet Sauvignon and Grenache Noir bred at INRA in Montpellier in 1961 and developed specifically for the climate of the Languedoc. Where the Cabernet provides structure and dark fruit, the Marselan adds depth of colour and a spicy component that makes the cuvée instantly recognisable.
Site and vinification
Domaine de la Baume farms around 200 hectares near Servian, between Béziers and Pézenas, on limestone, clay and sand soils 20 kilometres inland from the Mediterranean. The wine is aged half in new and half in used barriques – a choice that gives the wine depth without masking the fruit with too much new oak.
Tasting note
Dark garnet red. On the nose, pepper and bay leaf, underpinned by blackberry and black cherry. Concentrated and dense on the palate, with ripe, well-integrated tannins, and a long finish with a slightly sweet fruit aftertaste.
Drinking window: approachable now, with ageing potential until around 2028.
At the table: grilled meat, beef ribs, lamb; also with mature hard cheese.
