2021 Elite d'Or Chardonnay-Roussanne – Domaine de la Baume
A blend of 85% Chardonnay and 15% Roussanne - combining the world's best-known white grape with one of the most aromatic native varieties of the Rhône Valley and the Languedoc. The Roussanne brings texture and floral nuances, while the Chardonnay provides the backbone of fruit and acidity.
Site and vinification
For over a century, Domaine de la Baume has stood in the heart of the Languedoc, in Servian between Béziers and Pézenas. The Elite d'Or Blanc is fermented in new barriques and then aged on its fine lees with bâtonnage (regular stirring of the lees) for twelve months – an elaborate process that gives the wine its creamy texture and characteristic toasty notes.
Tasting note
Intense, brilliant straw yellow. Elegant on the nose, with aromas of candied lemon and nectarine, underpinned by fine toasty and mineral notes. Rich and voluminous on the palate, with hints of vanilla and hazelnut, carried by remarkable aromatic length and a mineral finish.
Drinking window: 2–5 years from the vintage; currently drinking well.
At the table: scallops, prawn and curry risotto, mature soft cheese such as Brie de Meaux; also recommended as an aperitif or with raclette and cheese fondue.
