Koval is Yiddish for "black sheep" – or for someone who achieves something extraordinary. Like the founders of Koval Distillery. In 2008, Robert and Sonat Birnecker hung up their academic careers. The distillery expert and distillation lecturer and the history professor traded books for stills to continue the distillation tradition in Chicago that Robert had learned from his Austrian grandfather. Today, Koval is the largest independent craft distillery in the USA.
Koval distills innovative whiskies from sustainably grown, mainly unmalted organic grains (often unconventional varieties) from the region. Following the "grain-to-bottle principle", the distillers control the entire supply chain and carry out every distillation step themselves. The whiskies then mature for four years in small single casks. Koval has now bottled three single barrels in a "Limited Edition" exclusively for customers of Kirsch Import.
A fruity Bourbon Whiskey – newly combined from 51% organic corn and 49% organic millet, with a taste profile that shows Bourbon fans a new side and at the same time opens up the category for the curious. "Bottled in Bond," it was produced strictly according to a fixed set of rules, similar to Single Malt Scotch. Theoretically, all of Koval's whiskies follow this. However, every bottling that wants to be labeled "bottled in bond" must be bottled at 50% vol.
