TASTING NOTES
Nose:
Honey sweetness & vanilla, followed by herbaceous-spicy aromas, a hint of grandma's furniture polish, notes of leather & tobacco, oranges, lemon drops and a hint of overripe fruits in the background
Palate:
the alcohol only shows in the peppery initial taste, but is otherwise surprisingly well integrated; otherwise, an oily mouthfeel dominates, carrying incredible spice and rich herbal aromas, paired with plenty of cinnamon, crème brûlée crust, peanuts & salted caramel, then dark chocolate & nutty-salty notes appear, some pumpernickel, finally becoming dry
Finish:
medium-long, slightly dry, with a mix of woody bitterness, cocoa powder and partly digestive-bitter-like aromas
Conclusion:
A great sherry dram that appears more 'mature' and significantly more balanced than its age would suggest. The FARY LOCHAN makes it easy to discover – and one should certainly give it air, time, and a little water to properly bring out all the nuances
The Danes from Give have been running their distillery since 2009. Until 2014, Scottish malt was used, since 2015 only local ingredients.
We managed to secure a cask from this distillery. Previously, only the big names SMWS and Berry Bros & Rudd succeeded in this. Thus, we are only the third independent bottler who can claim to bring a bottling from this distillery to the market. We think that alone is quite mad. But what makes this still small and by many still unregarded distillery so special that we bought a cask from it? Well, the Danes not only know how to distil good whisky, but they are also the first to smoke their malt over the smoke of nettles. The owner knows this method from his home island of Funen, where cheese, for example, is smoked this way. So, the distillery has a malt here that is not peated but nettle-smoked. If that isn't madness?
The malt we chose was distilled in 2014 and spent 7 years in a 1st Fill Oloroso Sherry Cask. It is unpeated.
