A special dry red wine with no added sulphites, with excellent structure and high minerality, made from dried grapes and fermented in the patented Fermentino Ca'Botta® tank for a particularly powerful body. Characteristics: Intense ruby red, almost black.

The bouquet is rich in advanced secondary and tertiary aromas, which develop through long fermentation with concentrated grapes. It is rich in spices, black pepper, cocoa, liquorice and notes of red berries, cherries, plums and chocolate. The taste is full of notes of ripe cherry fruit and blackberries, mixed with spices, especially black pepper.

This wine is very smooth and elegant. At the same time, it has strong tannins combined with balanced acidity. The wine leaves a feeling of freshness and a desire to taste this wine again and again.

Technical details:

Made from a selection of the best grapes, picked strictly by hand and under careful quality control. The harvest runs from the end of September to mid-October. The picked grapes are carefully placed in mesh crates and dried with fresh air from outside, ventilated with high-altitude air from the mountains.

The grapes are pressed in January at a proportion of 60%. As a result, each bottle contains 3 kg of fresh grapes. Vinification: maceration and fermentation take place in the Fermentino Ca'Botta® stainless steel tanks using a patented process. Maceration lasts 15 days at a temperature below 8°C, fermentation 30 days at a temperature below 20°C. After fermentation, the wine is matured for 12 months in American oak barriques.
