Nose: The nose opens with fruity notes of blackcurrant and raspberry, then the aromatic intensity increases with more complex notes of spices, wax, leather and coffee.
Palate: It is also complex on the palate, of incredible length and with tannins that wonderfully support and prolong the finish. This wine, undoubtedly one of Burgundy's greatest, will reach its peak in the mid-2020s.
Food pairing: Serve with hearty dishes: grilled red meat and game, roasted or braised, as well as roasted or glazed poultry. Strongly spiced cheeses: Livarot, Munster, Maroilles, Epoisses, Langres, Soumaintrain...
Terroir: Located in Vougeot in the heart of the Côte de Nuits, the Clos de Vougeot Grand Cru vineyard was founded around 1110 A.D. by the monks of the nearby Abbaye de Cîteaux. Its 50.59 hectares have never been fragmented, and it preserves its identity within the walls that enclosed it 5 centuries ago. On the slopes of the upper part of the Clos, it borders the vineyards of Musigny and Grands-Échezeaux.
Viticulture: Traditional winemaking in thermoregulated stainless steel tanks for a period of 3 weeks: Cold pre-fermentation maceration at approx. 8° C. Racking and pumping over to extract color and structure. Fermentation with a peak temperature around 30° C. Post-fermentation maceration at 25° C. Aging in oak barrels for 8 to 16 months with malolactic fermentation. 70 to 80% new oak barrels.
