DESCRIPTION
The 2017 Domaine Maldant Pauvelot Classique Santenay is fruity, with a hint of sweetness reminiscent of sweet spices. Confirmation on the palate with a powerful, long, and remarkably harmonious structure. The whole is underlined by a precise and elegant finish.
DEVELOPMENT
Traditional vinification in thermoregulated stainless steel tanks. Cold maceration under carbon dioxide to protect the aromas and colors. Matured for several months in oak barrels.
TASTING NOTES
On the palate, the 2017 Domaine Maldant Pauvelot Classique Santenay is powerful and well-balanced. The aromas of spices and fruits remain present. The ripe and present tannins lead to a long finish.
SERVING SUGGESTION
Serve at 13-18 °C with rabbit stew or monkfish.
