Nose: The nose is characterized by its elegance and freshness, reminiscent of aromas of strawberries and currants.
Palate: Dense on the palate with a fine and intense tannin structure, underlined by a toasted woody note and a long finish. Beautiful ripeness.
Food pairing: Ideal in combination with strong meats: roasted or grilled beef half, roasted, braised or stewed game. Intense washed-rind cheeses: Epoisses, Langres, Soumaintrain, Livarot...
Terroir: The Corton Grand Cru vineyard is located in the north of the Côte de Beaune, between the villages of Aloxe-Corton and Ladoix-Serrigny, on the heights of the mythical Corton mountain. The "Les Renardes" plot is located at the bottom of the hill, on the edge of the village of Ladoix-Serrigny. Corton is the only Grand Cru red wine of the Côte de Beaune.
Viticulture: Traditional winemaking in thermoregulated stainless steel tanks for a period of 3 weeks: Cold pre-fermentation maceration at 8° C. Racking and pumping over to extract color and structure. Fermentation with a peak temperature of around 30° C. Post-fermentation maceration at 25° C. Aging in oak barrels for 8 to 16 months with malolactic fermentation. 70 to 80% new oak barrels.
