TASTE:
Perfectly balanced flavors of honey malt, bread dough, baked apple and gingerbread, further accentuated by notes of marzipan and fennel seeds. All this is underpinned by a lively acidity that integrates wonderfully into the layers of flavor.
DESCRIPTION:
In its commitment to quality, Bollinger's Special Cuvée comes first. Predominantly Premier and Grand Cru wines are blended into the Cuvée. After each harvest, Bollinger selects some of the wines best characterizing the vintage as reserves and stores them for five to fifteen years in reserve magnum bottles under natural cork. To guarantee the quality and freshness of the "vins de réserve" over the years, a light bottle fermentation is allowed. This method is unique in Champagne. The Special Cuvée blend contains 5 - 10% "vins de réserve".
