While almost every champagne today is fermented in stainless steel tanks, Billecart-Salmon dares to do the exact opposite with this cuvée: complete vinification in wooden casks.
The house
Billecart-Salmon is the oldest continuously family-run champagne house – founded in 1818 through the marriage of Nicolas-François Billecart and Elisabeth Salmon in Mareuil-sur-Aÿ. Now run by the seventh generation under Mathieu Roland-Billecart, the house remains true to its guiding principle: quality over quantity, the pursuit of excellence.
The wine
Le Sous Bois – literally "under wood" – is a cuvée of roughly equal parts Chardonnay, Pinot Noir and Meunier from Grand and Premier Cru sites in the Côte des Blancs and the Montagne de Reims, as well as Aÿ and Mareuil-sur-Aÿ. The base wine is fermented and matured entirely in casks of various sizes, complemented by up to 40% reserve wine from earlier vintages. The wine matures on the lees for an average of six to seven years before it is disgorged and ages for further months in the bottle.
Tasting note
Crystal-clear, radiant golden yellow with a disciplined, energetic perlage. On the nose, fine notes of milk bread, melted butter and gentle spices that develop into pastry, citrus fruit and pome fruit, underpinned by malty hints that merge into mocha and bergamot. On the palate, powerful and full of character, with pronounced structure and integrity.
