Dom Pérignon Plénitude P2 Vintage 2004 in gift box

Every Dom Pérignon is aged for at least eight years before release. But each year a small quantity of wine is held back for even longer maturation. This additional time in the cellars results in a complex, deep, and concentrated champagne called Plénitude 2, the second life of Dom Pérignon. This second release of the 2004 vintage is similar in character and structure to the first release from 2013, but surpasses it in almost every respect. It is more diverse, deeper, more persistent, and more intense.

Assemblage and Origin:
After a year marked by dramatic frosts and a historic heatwave, 2004 stood out as a year of resurgence and calm in the vineyards. Although August was somewhat cool, the subsequent weeks of dry heat strongly shaped the vintage. The vines flourished magnificently, yielding a rich harvest of excellent, ripe grapes.

Aroma:
The fruit aromas remain discreet in this second release of the vintage but are more clearly defined, with citrus notes of pink grapefruit and blood oranges gently transitioning into fig aromas. The additional time on the lees highlights the minerality with a sublime maturity typical of Dom Pérignon. This is followed by notes of cocoa, mocha, toasted nuts, brioche, and honey.

Taste:
The aromas of this vintage reveal themselves immediately and surprisingly, oscillating between tension and weightlessness, uniting in a persistent and elegant finish, underscored by juicy licorice notes.

On the palate
On the palate: opulent, dynamic, and sensual, dominated by fruity notes. In an interplay of nose and palate, the initially prevailing opulence transitions into a hint of salt and licorice.
