Dom Pérignon Vintage 2015 Brut Champagne
Vinification and Maturation:
The Dom Pérignon Vintage 2015 Brut is made from carefully selected Pinot Noir and Chardonnay grapes. The traditional method of bottle fermentation and a long maturation on lees of at least 8 years create the complex aromas and fine effervescence that make this champagne unique. This meticulous production and maturation in the cellars of Dom Pérignon give the 2015 vintage a distinctive depth and sophistication.
Description and Characteristics:
The Nose: Initially, the wine presents with a somewhat dark, roasted note, reminiscent of cocoa powder. However, the nose soon opens up to a floral bouquet, evoking a lush bunch of flowers, with aromas of linden blossom, jasmine, and peony. These floral nuances are perfectly complemented by spicy notes of anise and cardamom. A refreshing vegetal and fruity freshness emerges, reminiscent of chlorophyll, orange peel, and green papaya, rounding off the wine's overall experience.
The Palate: On the palate, the wine presents as broad and harmonious, with a soft yet generous texture. The flavor unfolds particularly on the sides of the tongue rather than the tip, making it smooth and stimulating. Aromas of fresh peach and nectarine flesh envelop the tongue and are accompanied by bitter citrus notes and a hint of gentian, lending the wine a complex and refreshing depth.
Recommended Serving Temperature and Food Pairings:
To enjoy the full taste experience, Dom Pérignon Vintage 2015 Brut should be served at 8–10°C. It pairs perfectly with lobster, caviar, grilled dishes, or smoked fish. It is also an excellent accompaniment to fruity desserts or as an elegant apéritif.
