Domaine de la Baume, near Servian in the heart of the Languedoc, looks back on a long tradition but relies consistently on state-of-the-art cellar technology. The Elite range represents the top of its production and aims to bring out the fullest extraction and harmony of the grape varieties. In accordance with EU Regulation 2021/2117 this wine offers full transparency about its ingredients. Sensory analysis 

Tasting the Elite d'Or 2024 reveals a profile that impresses with its opulence, dark berry fruit and noble toasty notes.

  • Colour: In the glass the wine shows a deep, almost opaque purple-red with violet highlights and enormous viscosity.

  • Aromas (nose): The nose is dominated by an intense and complex bouquet:

    • Fruit: Dark cassis notes, ripe blackberries and a hint of stewed black plums.

    • Spice & toast: Nuances of fine cocoa, freshly roasted coffee beans and a fine vanilla note from the oak ageing.

    • Herbs: A subtle hint of garrigue herbs and Mediterranean scrub.

The soils of limestone and clay provide an ideal basis for the Cabernet grapes, as they retain moisture while allowing good drainage. The Mediterranean climate, with its hot, dry summers, ripens the Marselan grapes perfectly, giving the deep, dark colour and intense concentration.

The estate farms its plots in a targeted way. For the Elite range, yields are deliberately reduced to concentrate the substance in the remaining berries. The grapes are picked at optimal phenolic ripeness, to realise the full potential of the powerful tannins.

  • Fermentation: A long, temperature-controlled fermentation on the skins ensures maximum extraction of colour and aromas.

  • Blending: Cabernet Sauvignon and Marselan are blended according to strict sensory criteria, to achieve the optimal ratio between structure and fullness of fruit.

  • Ageing: The wine matures for several months in French oak barrels, which gives it its fine structure, toasty notes and enormous ageing potential.
