Taste
Colour: Very pale straw yellow with a fine, persistent perlage.
Nose: Fruity and floral – ripe golden apple and delicate mountain flowers, complemented by citrus and pear.
Palate: Dry, fresh and lively, with the hint of fruit sweetness on the attack typical of Prosecco, which makes it seem more approachable than its actual sugar content suggests.
Production
The grapes are harvested in mid-September and gently whole-bunch pressed. After the first settling, the base wine matures in temperature-controlled tanks before the second fermentation by the Charmat method. The vines are farmed according to the principles of the World Biodiversity Association's "Biodiversity Friend" certification, with particular attention to a low environmental footprint in the vineyard.
