Two grape varieties that rarely meet come together here with a third element that makes the difference: time in the barrel, without any filtration.

The wine

Vectum is Weingut Peter Briem's top-class blend – a cuvée from the estate's best selected lots of grapes, produced in strictly limited numbers. It takes its name from the Latin word for the natural deposit that can form in the bottle of unfiltered wines – a sign of authenticity, not of carelessness. The Spätburgunder (Pinot Noir) brings the Kaiserstuhl's established backbone, while the Cabernet Sauvignon gives the cuvée international stature and extra depth.

Vinification

Fermented and matured in new 500-litre tonneaux, aged on the fine lees and clarified without filtration. This painstaking process demands patience, but in return gives the wine a complexity that faster methods can hardly achieve.

Tasting note

Deep purple with black-cherry highlights and dense legs. A multi-layered, powerful interplay of aromas: forest berries, dried cherry and fine chocolate. A clear, finely drawn tannin structure on the palate – rich, complex and substantial.

Hearty braised dishes, grilled beef, game in a dark sauce, aged hard cheese.
