Production

The T. Sonthi Belize XO is made from sugar cane molasses, distilled at Travellers Liquors Limited – one of the best-known rum distilleries in Belize. The rum spends fourteen years there in ex-bourbon casks of American white oak, which gives it its full-bodied character. It then receives a finish in former Madeira casks in Germany, developed by Thomas Sontheimer, the brains behind T. Sonthi. The dark colour comes exclusively from the influence of the cask – the rum has not been coloured, and with less than 20 g of sugar per litre it is noticeably less sweet than the other T. Sonthi bottlings from Barbados and Panama.

Tasting note

Powerful aromas of ripe tropical fruit and spicy oak on the nose. On the palate, notes of toasted wood, sweet oak and chocolate emerge, underpinned by the fruity hints of the Madeira finish. Substantial and deep, with clean, recognisable cask management rather than mere sweetness.

Serving suggestion

Enjoyed neat, this molasses rum reveals its full structured depth; it is particularly harmonious with dark chocolate and a medium-strength cigar.
